Quest for the Ultimate Lobster Roll: Clamman

All summer long, Plum will be feasting on dozens upon dozens of lobster rolls all over the East End and by Labor Day we're going to let you vote for the one you think is the very best.

Now in week two of the competition, things are really heating up! Who knew this was going to be so controversial? Last week, we were at Bobby Van's in Bridgehampton … and boy did you all have a lot to say! This week we headed to the Clamman in Southampton where Plum's Robyn Moreno sampled their "keepin' it real" version of this classic East End treat.

Started nearly 30 years ago by Paul Koster (all the restaurants would call him the "Clam Man" and the name just stuck), the Clamman is still doing brisk business in the very same spot. We asked them to divulge their recipe and, after a long pause, they reluctantly said, "lobster." Indeed!

After a bit more prodding, they said their traditional lobster roll (on a real roll, not on a hot dog bun mind you) starts with none other than with the freshest lobster they can get. The salad is made fresh every morning, and sometimes twice a day in the peak of the season. Another selling point they’re quite proud of is the fact that they keep their lobster roll "at a price point where everyone can enjoy it, all year round." And simplicity rules as they serve the roll with homemade potato chips and cole slaw … does it get any better than that?
