John Hogan from Bar Magic would make Chileans AND Peruvians happy with his Pisco Sour.
Warning - Do try this at home:
PISCO SOUR
2 oz. Macchu Pisco
1 oz. fresh lime juice
1 sugar cube
1 egg white
Angostura Bitters
Combine all ingredients in a large shaker and shake vigorously to froth. Fill ¾ of the shaker with ice and shake vigorously again to chill. Strain into a martini glass and add two dashes of bitters on the frothy top for garnish. Mix 'til pretty, sit back and sip!

I love pisco sours! I have had some really gnarly pisco in Chile, when I traveled through South America last year. Perivian pisco is the real deal! They range in flavor and aromatics but the key is to find a smooth, unfirey one, that can give you a happy buzz ... xoxoxo. I will try Macchu Pisco and put it to the test. John, I am trusting you with my Saturday morning brunch. Please don't let me down!
